Allergic to (almost) everything
I have 2 healthy children that can eat anything. Which is wonderful! But, I have 3 children.
My middle child is allergic to everything. He is allergic to eggs, milk and tree nuts. Okay, I know what you are thinking. That’s NOT everything.
CLEARLY that was an exaggeration. Duh. But I’d also like to point out how challenging it is to have a child who is severely allergic to these 3 things. They are in so many things. Or perhaps you’ve seen the little note that says “may contain tree nuts”. Which basically means my son might or might not die from eating said product. A true gamble, which obviously I’m not willing to risk.
So he’s allergic to 3 things. But he is also extremely intolerant to well...basically everything else. Here's the list of foods he can't eat. Just so you can truly understand.
Milk, egg (white and yolk), pistachio, cashew, tiger nut, hazelnut, soy beans, brazil nuts, walnut, coconut, pea, oats, sunflower seeds, agar agar, lentils, couscous, peanuts, rice, oranges, almonds, broad beans, wheat, gladden, amaranth, barley, spelt, wheat bran, gingko, durum wheat, corn, white beans, kidney beans, aloe vera, celery, cabbage, potato, pomegranate, squash (summer, butternut and carnival), mustard, radish, fig, rye, yuca, flax seeds, lime, malt, pear, turnip, mushroom and good old polenta.
Poor little bugger.
Are you starting to understand a little how difficult this is? It consumes a lot of my life. I have to meal plan like a boss and alter every recipe in the history of mankind. I’ve become a serious food scientist.
Thank GOD I love to cook and bake, because I sure do a lot of it. Actually the science behind it all fascinates me. When I see a cool recipe, I always go through the ingredients one by one and think of what replacements I could use to make it appropriate for Fletcher.
So since this consumes so much of my life, I thought, why not start a blog! Document the craziness. Record the recipes, share with all the other people out there that struggle.
