Easy & Delicious Vegan/Gluten Free Cookies
Did I mention these were easy? I mean super easy. I have been experimenting with cookie recipes for a while now and this is by far the most simple and it just so happens to be vegan & gluten-free. Score!
I made these for the kids for St. Patrick's Day, so I added a bit of green food colouring, clearly this is not integral to the recipe;).
2 cups gluten-free flour (I used one cup of buckwheat and 1 cup of sorghum)
1/2 teaspoon baking powder
1/3 cup maple syrup
2 teaspoons vanilla extract (we actually used caramel extract because we were out of vanilla - delish!)
1/2 cup chocolate chips
Optional: 5-10 drops of green food colouring.
Preheat oven to 350°F. Whisk dry flour and baking soda together, add maple syrup and vanilla. Mix it until it forms a doughy texture. Stir in chocolate chips, or if you want to do something fancy like make creepy chocolate chip smiley faces place them into your cookie balls. Make cookie balls out of dough and place on baking sheet with parchment paper. Bake for 10-12 minutes. Stuff your face*.
*Remove cookies from oven before stuffing your face, also wait for them to cool a bit.
