Quinoa Broccoli Bites

I got the original recipe for this one here.  As usual I made modifications to fit Fletcher’s needs as well as Ophelia’s and what I had in the pantry.  I was looking for a recipe that I could use with my leftover cooked quinoa. I wanted something that Ophelia could eat and that maybe Fletch would enjoy as an after school snack.

 I think it’s safe to say these were a hit.

Ingredients

  • 2 cups cooked quinoa

  • 1 small avocado

  • 2 chia eggs (2 Tbsps chia seeds + 5 tbsps water)

  • 5 cups grated cheese or cheese alternative like daiya

  • 1 cup finely chopped broccoli

  • 1/4 cup chopped spinach

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • handful of bacon bits (optional but Fletch looooooooves bacon)

After school snacking. Anyone else’s kids STAAAAAAAAARVING as soon as they get home? Also this looks like mush. It’s because I warmed it up and cut it up with some vegan butter.

Ingredients

  1. Preheat oven to 350° F .

  2. Mix up all the ingredients in a bowl. 

  3. Plop the mixture in muffin tins, either after spraying it with some non-stick spray or directly into cupcake liner.

  4. Bake for 20 minutes or so until the bites are firm to the touch and a bit brown on the top, they should be browning a little.

  5. Eat or serve to your children and watch them enjoy.  Fletch liked it with a little Earth Balance butter on it.
