Quinoa Broccoli Bites
I got the original recipe for this one here. As usual I made modifications to fit Fletcher’s needs as well as Ophelia’s and what I had in the pantry. I was looking for a recipe that I could use with my leftover cooked quinoa. I wanted something that Ophelia could eat and that maybe Fletch would enjoy as an after school snack.
I think it’s safe to say these were a hit.
2 cups cooked quinoa
1 small avocado
2 chia eggs (2 Tbsps chia seeds + 5 tbsps water)
5 cups grated cheese or cheese alternative like daiya
1 cup finely chopped broccoli
1/4 cup chopped spinach
1/2 tsp salt
1/2 tsp pepper
handful of bacon bits (optional but Fletch looooooooves bacon)
Preheat oven to 350° F .
Mix up all the ingredients in a bowl.
Plop the mixture in muffin tins, either after spraying it with some non-stick spray or directly into cupcake liner.
Bake for 20 minutes or so until the bites are firm to the touch and a bit brown on the top, they should be browning a little.
Eat or serve to your children and watch them enjoy. Fletch liked it with a little Earth Balance butter on it.
