Vegan/Gluten Free Chocolate Cake

I got the original recipe for this cake here, but of course made some changes because that is how I roll in the kitchen.

Ingredients for Cake:

  • 3/4 cup maple syrup

  • 2/3 cup coconut oil

  • 2 tsp vanilla extract

  • 1 plantain (or banana if you want it more banana tasting)

  • 2 cups quinoa flour

  • 2/3 cup cocoa powder

  • 2 tbsp chocolate protein powder (I use pure paleo, because Fletch does best with a beef base protein powder - totally up to you what you use. You could also use coffee!)

  • 2 tbsp sunflower lecithin (optional but I add this to add more choline to Fletcher’s diet)

  • 1 1/2 tsp baking soda

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 2 tsp vinegar

  • 2 cups almond milk (can use soy)


    Ingredients for Frosting:

  • 1 cup vegan "butter" like Earth Balance

  • 2 cups confectioners' sugar (I use swerve)

  • 1/4 cup cocoa powder

  • 1 tsp protein powder (totally optional)

  • 1 tsp vanilla extract

I make another option in the video below. Cookies and cream :) Basically omit the cocoa and protein powder and add crumbled up oreos. Booya!

Make the cake:

  1. Preheat oven to 350°F.

  2. In the blender or food processor combine the maple syrup, vanilla extract, melted (or soft) coconut oil and plantain until there’s no chunks and it looks, you know…mixed up.

  3. In another bowl, mix together the quinoa flour, baking soda, baking powder, protein powder, sunflower lecithin, cocoa powder and salt.

  4. In another bowl mix together almond milk and vinegar. I know, I know, so many bowls!

  5. Add the cocoa-flour mixture to the wet ingredients in spurts alternating with the almond milk-vinegar mixture until all is mixed up.

  6. Line two 9-inch cake pans with parchment paper at the bottom, or put a little butter with flour on the bottom. Divide the cake batter evenly between the two pans. Or be a rebel and make some cupcakes.

  7. Bake in oven for 30-35 minutes or until a toothpick stuck in the center of each cake comes out clean.

  8. Cool the cake, then run a knife along the edges of the cake pans and then flip carefully onto a plate.

  9. Cool completely before frosting.


    Make the frosting:

  10. Mix vegan butter, icing sugar and vanilla together

  11. If you want chocolate icing add the protein powder and cocoa

  12. If you want cookies and cream icing add some crushed up oreos.

  13. Frost those cakes!

  14. Eat those cakes!

On a sidenote, I’m trying this new thing…making videos so I can remember what I do but also so you can see how cooking in my kitchen works. A lot of improvising, a lot of kids interrupting, a lot of me being super awkward. I’ve gotten like 7 hits on YouTube, I’m well on my way to fame and fortune I think. I’m also learning as I go, so don’t judge my editing style. The style is, I threw it all together and didn’t edit it. Watch out Spielberg
